Don’t be scared – this veg filled soup might not be the prettiest but its super easy, quick and cheap to make. All you need is a handful of Kale, Miso paste and any additions you like – I’ve added grated carrot and a chunk of ginger. This is a really good immunity booster as it starts to get chilly outside and can be made ahead and kept in the fridge ready to grab-and-go.
- Glass noodles
- Leftover veg
- small fine beans
- Leftover chicken
- Spring onions
- Diced carrot for crunch
- Cold pasta
Put 1 giant tea spoon of Miso paste in to a mug, bowl or jar .
Add a small splash of freshly boiled water and stir so the paste is more liquid.
Finely chop the handful of kale and mix into the paste so they get coated.
Add your extras (Ginger works really well)
Cover with boiling water and leave to soak for 5 minutes or until drinkable temperature.
