This is an impromptu post, but I couldn’t possibly keep this little gem to myself. One of my favourite things to do is keep an eye out for the strangest/ most exotic fruit – and boy did I stumble across something good this time. Lychees aren’t particularly rare anymore but apart from eating them as they come (which is great) I’ve never done anything else with them…. until today. This drink is flamingo pink, totally refreshing and tastes like summer.
You will need:
1/2 cup frozen strawberries
1/2 a lime
6-8 fresh lychee
1/2 cup water
Peel + de-stone the lychee
Pulverise the lychee in a blender, add the water, blitz again and sieve into a small jug (the liquid will be milky white)
Put the frozen strawberries in the bender and blast until small chunks, almost powdery
Pour the lychee and strawberry into a glass, squeeze in half a lime and mix with a straw.
